Ingredients:
For the Crust:
2 cups Oreo crumbs
¼ cup unsalted butter, melted

24 oz (680g) cream cheese, softened
1 cup granulated sugar
1 cup sour cream

3 large eggs
2 tbsp cocoa powder
1 tsp red food coloring
½ cup crushed Oreos
For the Drip:
1 cup semi-sweet chocolate chips
½ cup heavy cream
For Decoration:
Whipped cream

Red velvet cake crumbs

Directions:
Prepare the Crust: Preheat oven to 325øF (163øC). Combine Oreo crumbs
and melted butter, press into a 9-inch springform pan, and bake for 10
minutes. Let cool.
Make the Cheesecake Filling: Beat cream cheese until smooth. Mix in
sugar, sour cream, and vanilla. Add eggs one at a time, then mix in
cocoa powder and red food coloring. Fold in crushed Oreos.
Assemble and Bake: Pour batter into the cooled crust and bake for
60-70 minutes. Cool in the oven with the door open for 1 hour, then
refrigerate for at least 4 hours.
Prepare the Drip: Melt chocolate chips and heavy cream in the
microwave, stirring until smooth. Drizzle over the cheesecake.
Decorate: Top with whipped cream, mini Oreos, red velvet cake crumbs,
and sprinkles.
