Even in the real world there is a shark species that can survive eating
seagrass (more than 60% of their diet), but is really a 'flexitarian' /
'semi-vegetarian' / 'omnivorous' since they do eat various crustaceans
as well.

I read an amusing article somewhere once which claimed that Pandas
are carnivores who have decided, for some reason, to eat only bamboo
shoots. They still have a carnivore's digestive system, so they
get almost no nutrition from their diet meaning that they have to
spend almost the entire day eating and pooping, and furthermore
that they get so little energy from it that they tend to avoid
moving much at all and walk downhill whenever they can. How much
of that is true, I don't know.

Then there is Kim Harrison's Rachel Morgan universe, where genetically modified
tomatoes led to a plague that decimated humanity.

Is that connected to the cinematic gem "Attack of the Killer Tomatoes"?

Then there are the 'documentaries':
˙- Attack of the Killer Tomatoes (1978)
˙- Return of the Killer Tomatoes (1988)
˙- Killer Tomatoes Strike Back˙˙ (1991)
˙- Killer Tomatoes Eat France.˙˙ (1992)
˙- Killer Tomatoes: Organic Intelligence (in production)

Don't believe so. Harrison's storyline did, however, result
in a vampire becoming president of the United States during the pandemic.
They are filming a reboot of the AotKT movie this year.
