750 ml Brandy
15 Egg yolks
1 lb Caster sugar
4 pt Milk
1 1/2 pt Cream
2 ts Vanilla
Nutmeg
Whip egg yolks until a pale creamy yellow.
Add sugar very slowly, whipping constantly.
Add brandy in a very thin stream, whipping constantly.
Then milk, same way.
Then cream, same way.
