    Title: Mexican White Trash
    Categories: Breaqds, Cheese, Poultry, Dairy
    Yield: 6 servings

    9 3/4 oz bag Nacho Doritos; crushed
    2 c Shredded chicken
    2 c Shredded cheese; more to
    - taste
    10 3/4 oz Can Cream of Chicken soup;
    - undiluted
    1o oz Can Ro*tel tomatoes w/green
    - chilies
    1/2 c Sour cream
    1/2 c Milk
    1/2 oz Taco seasoning (1/2 env);
    - more to taste

    Set oven @ 350ºF/175ºC. Spray a 2 quart casserole dish
    with nonstick spray.

    Mix together all ingredients except the Doritos.

    Layer half of the Doritos (approx. 2 cups) on the bottom
    of casserole dish, then spread half of the chicken
    mixture, the rest of the Doritos and the rest of the
    chicken mixture.

    Add more cheese on top.

    Cover with foil and bake for 35 minutes.

    Yield: 1 Batch

    1 cn Black-eyed peas; drained
    1 cn Hominy; drained
    1 cn Diced tomatoes; drained
    1 cn Ro-Tel tomatoes; drained
    3 Green onions; up to 4,
    - chopped
    16 oz Bottle Italian dressing

    Mix together and chill. The longer it sits in the fridge the better.
    Serve with tortilla chips.

    Title: Trailer Trash Nachos
    Categories: Five, Potatoes, Cheese, Pork, Vegetables
    Yield: 1 servings

    2 c Potato chips; crinkle Cut
    1/4 c Mexican cheese blends; or
    - more
    2 oz Inexpensive bacon
    1/8 c Scallion greens

    Cut bacon in 1" pieces, fry until crispy, drain on
    paper towel, dice

    Rinse, pat dry. Cut green part of scallion to 1/4"

    Any cheese blend will do

    Place the chips on a microwave proof plate. Spread
    them out, add cheese, bacon and scallion. Mircowave
    until cheese is melted.

    Try this with your own home made potato chips too,
    always to remember to salt and pepper your fresh ones
    while they are still greasy. If you don't have a
    mandoline you can just use a potato peeler to shave
    very thin slices of potato, then deep fry them covered
    in oil for about 5 minuts.

    The ingredient list is beautifully minimal. It looks suitable for microwave oven cooking. Decades ago i'd call that "sleazy nachos." :)

    Title: Chinese Balderdash
    Categories: Beef, Chinese
    Yield: 1 Batch

    MMMMM------------------------BASIC SAUCE-----------------------------
    2 tb Corn starch
    1/2 ts Dry mustard
    2 ts Soy sauce
    1/4 c Water

    MMMMM--------------------------STIR FRY-------------------------------
    1 lb Lean beef
    Bok choy; chopped
    Canned water chestnuts
    Mung bean sprouts
    2 tb Cooking oil; +2 tb, divided
    Napa cabbage; chopped
    Canned bamboo shoots
    Soy sauce

    If you are wondering about the name of this dish, the real story is
    unknown. Balderdash is now defined by the Slang Dictionary as "a heap
    of utter crap", but the softer 1950's definition was probably "utter
    nonsense". The fact that Edith chose to call this fairly
    straightforward stir-fry "Balderdash" is perhaps an indication of her
    priorities (career versus cooking) at the time.

    Thoroughly mix sauce ingredients. Set aside.

    Slice beef thinly and marinate for 10 minutes in soy sauce. Heat oil
    until very hot. Drain beef and stir fry until nearly cooked then
    remove and set aside.

    Heat second portion of oil and stir fry bok choy for 1 to 2 minutes,
    then add remaining vegetables. Cook for 1 to 2 minutes more. Add beef
    and basic sauce. Cook 1 to 2 minutes. Then add about 1 cup mung beans
    and cook 1 more minute.

    Serve over rice with Chinese mustard and soy sauce on the side.
