Title: Cucumber Salsa

Yield: 3 servings
1 c Cucumbers; mix of yellow,
- green, and watermelon
- gherkins, seeded & diced
2 tb Red onion; diced
Juice of 2 limes
2 tb Extra virgin olive oil
2 tb Red jalapeno; fine diced
1/2 ts Kosher salt
1 tb Mint; thin sliced
1 tb Basil; thin sliced
1 tb Cilantro; thin sliced
1 tb Lemon balm; thin sliced
In a medium bowl, add the cucumbers, onion, lime juice,
olive oil, jalapeno, and a pinch of salt. Toss to
combine and taste for salt. Add more if desired. Stir
in the sliced herbs, and serve immediately.
