She was a "social worker" and attending my local branch of the
University of Illinois to complete her Master's in Social Work when
    they dropped the bomb.

Did she finish the Master's or just let it drop? My mom was told she
had 5 years to get her Master's in Library Science, then the state said "you can't do it; you have a husband and 5 kids to take care of". She proved them wrong, pulling down A's and B's in all her course work.

She 86ed the Masters. The three weekly trips between the campus and
home (50 miles each way) would havehad he choosing between gas for the
car and food for the tummy.

Sounds like she made the better choice in the long run.

Especially since the degree was going to apply toher work - and if she
was prevented from thaat work ........

While travelling, we saw some place advertising chicken rings. Couldn't stop to investigate, figure it must have been chopped and formed
    chicken.

I do believe you are correct. To wit:

    Title: White Castle Chicken Rings
    Categories: Poultry, Breads, Snacks
    Yield: 4 servings

Now that we are out of the OH/IL/IN (White Castle) territory, I'll probably not think about chicken rings again. It was unusual enough
that Steve commented on it, something he usually doesn't do about fast food.

I'm sure that White Castle isn't the only place doing them. I'd almost
bet the Jack-In-The-Box would be guilty of them as well. And Tyson has them available in the freezers at you local stupormarkup.

I think I'll take a pass on them.

    Me too.

Ground chicken is very versatile ......

I used to buy a lot of ground turkey but go with more ground beef now. Probably should go back to at least some turkey.

Me and Jennie-O have been good friends in past times. Not so much any more. It's a lot more common to see ground turkey in the meat counters at the stupormarkup than ground chicken.

    Title: Housewarming Burgers
    Categories: Beef, Breads, Sauces, Citrus
    Yield: 4 Servings

    1 lb Ground turkey *
1/4 c Quick cooking oats; or bread
    - crumbs
    2 tb Tomato paste
    1 tb Lemon juice
    1 ts Soy sauce
    1 ts Worcestershire sauce
1 ts Garlic granules; or more
    1 ts Paprika
    pn (ea) salt & pepper
    4 Whole wheat buns
    4 sl Really good yellow cheese;
    - optional (UDD)

    MMMMM------------------------UDD TOPPINGS-----------------------------
    Sliced onion
    Sliced tomato
    Peeled, pitted, sliced
    - avocado
    Hamburger dill slices
    Mustard & catsup
    Mayonnaise

    * Ground chuck works well in place of the buzzard - but
it won't be as "healty" - UDD

In a medium mixing bowl, combine turkey, oats, tomato
paste, lemon juice, soy sauce, and Worcestershire sauce.
Add in seasonings and combine well. Divide into 4
    patties.

Let sit in the fridge for 30 minutes to let the flavors
    really sink in.

Heat grill on high. Once heated, add burgers and close
the lid. Let cook for 5 minutes, flip, then cook another
3-5 minutes or until cooked to your desired doneness.

Remove patties and place on bun. Add toppings of choice
    and enjoy!

UDD Notes: I've made this with both turkey and beef. I
prefer the beef. Next I'm going to try ground pork. As
for the toppings - those are all things I actually use
from time to time. With the soy and Worster sauces in
the mix - if you're adding cheese - choose an assertive
flavour else it will just be coloured bun filler.

Oh, yeah - this recipe works inside on a grill pan/
    skillet just fine.

I sorta, kinda lucke into a Master's at the local university. The dean
of students had been after me for some time to take a C.L.E.P. test to
see where I'd land (College Level Entrance Preparedness). And I kept
putting him off. Then one fine afternoon he showed up at the perpetual
pinochle game in the student union and informed me that he had paid my registratopn for the following wek end.

It was kind of neat. I took their batery of tests, audited on post-grad
level course and wrote a nice papaer. Prest-Change-O,Bob's your uncle.
I had a Master's in Public Affairs Reporting.

Title: Slow Cooker Chicken Chile Verde (Temple)
    Categories: Poultry, Chilies, Citrus, Herbs
    Yield: 7 Servings

    2 lb Tomatillos; husked, washed,
    - dried, halved
    10 md Anaheim chilies; stemmed,
    - halved, seeded
    1 Jalapeno chile
    1 c Diced onion
    4 cl Garlic
    2 c Rough chopped cilantro
    1 tb Cumin
    1 ts Paprika
Zest and juice of 1 lime
    1/2 ts Sugar
    1/2 ts Salt
    1/2 ts Black pepper
    2 c Chicken broth
    2 lb Chicken; skinned, boned
    +=OR=+
2 lb Ground chicken or turkey

    MMMMM-----------------------ACCOMPANIMENTS----------------------------
    Tortillas
    Beans
    Rice

    Set oven @ 450ºF/232ºC.

In a skillet cook the ground meat until it no longer
clumps together. Don't worry about getting it "done"
as that will be taken care of in the crockpot.

Place tomatillos and Anaheim peppers on two large greased
baking sheets. Roast until tomatillos are golden brown
about 5-7 minutes, and until peppers are charred.

Place peppers in a brown paper bag to sweat for about
ten minutes. Remove the peppers from the bag and peel.

In a blender or food processor, combine 6 peppers (12
pepper halves), tomatillos, jalapeños, onion, garlic,
cilantro, cumin, paprika, lime zest and juice, sugar,
and salt & pepper to taste. Blend until smooth.

Dice the remaining Anaheim peppers. Pour salsa verde,
chicken broth, diced Anaheim peppers, and meat into the
slow cooker. Add salt and pepper.

Cook on high for 3-4 hours or on low for 6-8 hours.

Serve warm with tortillas, beans, and rice.

Or serve spooned over breakfast eggs. (and potatoes)

YIELD: SERVES 6-8 as a dish. Many more as a topping.

Would that all degrees were so easy. I got a diploma in Women's Studies
a few years ago. It had been a long time since I got my Bachelor's
degree (Sociology with minors in Psychology and Art) so I really had to
work at it. Finished 13 courses with 10 A's and 3 A+'s tho.

Sounds good if I leave the cilantro out or cut it to a bare minimum. We
had supper in our favorite (while we were stationed at Fort Huachuca)
Mexican place when we were in the area. Just as good as ever--and they
brought some fried flour tortilla chips for Steve when he told them he
